Harissa popularity ignites surge in mutton demand across Kashmir this winter

Srinagar, Jan 02 (KNO): With Harissa taking center stage in Kashmir this winter, the demand for mutton has soared manifold in Kashmir.

As per news agency—Kashmir News Observer (KNO), Harissa, a winter delicacy of Kashmir, apart from kitchens is also being adopted by scores of the restaurants in Kashmir.

This has increased the demand for mutton following which the supply has considerably increased in Kashmir this season.

The situation is such that the supply of mutton in Kashmir this winter has increased by more than 30 per cent during the ongoing season.

All Kashmir Mutton Dealers’ Association, Khazir Mohammad Rigoo told Kashmir News Observer that on an average daily mutton worth Rs 12 crore was supplied to the valley.

“Mutton demand has gone up this winter. There is not any kind of shortage right now and on an average daily mutton worth Rs 12 crore is being supplied to the valley,” he said.

Rigoo said during summers, the supply and consumption of mutton was less compared to the ongoing winter.

“If we compare the current mutton supply with summer, we would receive a supply worth Rs 8 crore on an average daily. Right now, mutton demand is higher because of the winter food habits of Kashmir,” he said.

Rigoo said the quality of mutton has subsequently improved during the winter season. “Quality of mutton is much better now. People want the best quality mutton, so the suppliers import best mutton breeds to Kashmir,” he said.

Known for its bold blend of chili peppers, garlic, and various spices, Harissa has become the go-to ingredient for chefs and home cooks alike, transforming traditional mutton dishes into spicy delights.

Restaurants across Kashmir are seizing the opportunity to cater to the growing demand, featuring harissa-marinated mutton prominently on their winter menus.

From the bustling streets of Srinagar to the serene valleys of Gulmarg, sizzling Harissa has become one of the most consumed winter delicacies in restaurants.

“Harrisa is reporting good sales during winter due to which we see a lot of restaurants and home kitchens selling Harissa as a prime cuisine during winters. We are witnessing maximum sales of Harissa during winters even though we serve other dishes like tandoori chicken, butter chicken and Gajar ka halwa,” said Rubina who owns a food outlet Neimat—(KNO)
